White Chocolate & Cherry Scones

I woke up to spring yesterday.  The sun was out.  There was grass again.  My neighborhood filled with life as people escaped their houses and found freedom in the outdoors.  It felt like a day for something delicious.  I desired a treat. Something that tasted like spring.

This recipe for White Chocolate & Cherry Scones is a variation on the Fruit Scones recipe found in Jamie Oliver’s book “Jamie’s Food Revolution”.   These are a quick treat to make and feel very indulgent. Enjoy!

White Chocolate & Cherry Scones
Serves 12

  • 1 c dried cherries
  • 1 c white chocolate chips
  • 4 all purpose flour
  • 1 tbsp + 1 tsp baking powder
  • 1 tsp salt
  • 1/2 c butter (cold)
  • 2 eggs
  • 1/2 c milk + more to adjust the wetness of the dough.

  • Preheat the oven to 400 degrees
  • Soak the cherries in water (just enough to cover)
  • Throw the flour, baking powder, salt and butter into a food processor and run it until it is a crumbly mixture.  Alternatively you can mix it by hand cutting the butter in with a knife.
  • Transfer the mixture to a large mixing bowl.  Punch a crater in the centre of the mixture to act as a well to collect the wet ingredients.
  • In a small bowl beat the eggs with a fork until fluffy.
  • Add the milk to the eggs and beat to combine.
  • Drain the cherries well in a colander.
  • Pour the liquid mixture, cherries and white chocolate chips into the dry ingredient bowl.
  • Mix the dough until it is soft, slightly wet and combines well.  You will likely need to add more milk at this point but add it very carefully and in small amounts until the texture is just right.  You don’t want a soggy dough.  You want a dough that is a bit on the drier side.
  • Line a baking sheet with parchment paper.
  • Roll large clumps of the mixture into balls between two hands.  Press down until you get a lovely slightly flat scone.
  • After the sheet is full place in the oven for 20-25 minutes until the tops are golden brown.
  • Remove from the oven and let cool before enjoying.

Extra Instructions:

  • These are lovely sweet dessert scones.   Serve them slightly warm with a tiny amount of butter or whipped cream if you’re feeling particularly indulgent.  They are also delicious plain.
  • If you feel creative feel free to swap out ingredients.  Add 1 c of grated cheddar instead of the cherries and chocolate.  Throw in some hot pepper flakes with the cheese and you’ve got a lovely savory side for dinner. There is no end to what you can do with these just throw in what you like and you’re set.

    • Thanks April! They were so tasty. I love the basic recipe as it doesn’t have sugar so you can really do a lot with it. I hope you have a great weekend too!
