Wellness on Whatever Day.

As I was too distracted this week to do a Wellness on Wednesday I figured a Wellness on Whatever Day was in order. This afternoon was spend in a laundry/cleaning frenzy as I had gotten behind this week (due to the flood and contractors, after holiday celebrations and life in general). So today for dinner I turned to an old standby that hits our table when I’m tired, and craving something delicious…

The Vegetarian Pita Pizza

It’s so delicious.  It’s so easy.  It’s decadent and it’s not bad for you. When you’re trying to take care of yourself but you want a ‘guilty’ pleasure or feel the need to indulge this meal is one you can turn to.  It satisfies like your old ‘take out’ pizza but doesn’t come with the add ons of guilt and indigestion.   Here’s the ‘recipe’ in case you’re interested.

Pita Pizzas:

  • Whole Wheat Pitas (Generally I use thin ones as I enjoy thin crust pizza – try to aim for less than 200 calories/pita)
  • Olive Oil
  • Pizza Sauce
  • Shredded Part-Skim Mozzarella Cheese
  • Grated Light Parmesan Cheese
  • Assortment of veggie toppings (here I used olives, sun-dried tomatoes, and red pepper flakes)


  • Place oven rack 2/3 of the way in the oven
  • Heat oven to 400 degrees.
  • Lightly brush the Pitas with Olive Oil on both sides.
  • Slide into the oven for 2-4 minutes.  The goal is to get them toasting so that you have the crunch you desire when finished. Watch them closely and pull them out when they are lightly toasted.
  • Cover your pita with sauce, mozarella cheese, toppings and then sprinkle a small amount of light parmesan on top.
  • Put the pita back in the oven and bake until the cheese is bubbly and brown.   This takes next to no time (maybe 5-10 minutes tops depending on your oven.
  • Take the pita out and cut into pieces.  Enjoy!

Extra Information:

I’ve made this more ways than you can count.  Throw whatever veggies you have in the fridge on your pita and enjoy.  These are great for kids as you can put out bowls of toppings and let them dress their own.  Because they take only a few minutes to cook you can get an assembly line going and it really doesn’t take that much time to get everyone’s ready.
